Cacao Avocado Pudding: A Simple, Nourishing Treat

What a lot of people don’t know is that before I became a three-time cancer and transplant survivor, I was the creator of a plant-based food blog—back in 2008, when the concept of plant-based eating was still overwhelming for most people.

In those early days, before I turned said blog into a nationally distributed food company, I spent nights and weekends partnering with local stores and naturopaths, teaching people how to cook the same recipes I shared on my blog. And this cacao avocado pudding was always one of my favorites.

It’s a great entry level recipe Because it’s as simple as it is delicious—no need for an entire pantry of superfoods, just five ingredients and a blender.

A Recipe That Helped Me Through Treatment

During treatment, this pudding became even more loved. When eating felt impossible—when nothing stayed down—this was one of the few things I could enjoy.

Doctors often say, "Eat anything you can. Don’t worry about nutrition, just get in the calories." But I believe there’s a better way—one that’s gentle on digestion, packed with real nutrients, and still delicious and easy to eat.

  1. Prep ingredients. Slice the avocados in half, remove the pit, and scoop out the flesh into a food processor. Add the remaining ingredients into the food processor.

  2. Blend until smooth and creamy, scraping down the sides as needed. Test and see if you'd like to add any additional sweetener. I tend to be light handed on the stevia drops and then add more as I go based on flavor.

  3. Scoop into bowls. Divide the chocolate avocado pudding between four serving bowls.

  4. Garnish and serve. Add your favorite toppings such as chopped cacao nibs and flaked sea salt.
